Bittersweet Chocolate Orange Bundt Cake

In a large bowl blend together:
1/2 cup Omega safflower oil
1 cup Ecosweet cane sugar
3 eggs

Rind of 2 organic oranges (reserve 1/4 tsp. for glaze)
2 tsp. Vanilla
Stir in:
2 cups grated zucchini
1 cup ground walnuts or pecans

Mix together dry ingredients:
2 1/2 cups ww pastry flour
3/4 cups dark cocoa powder
2 1/2 tsp. baking powder
1 1/2 tsp. Baking soda
1 tsp. Cinnamon

Add dry mix alternately with liquid:
2 Tbsp. orange liqueur
Plus juice of 1 1/2 oranges

Top up to 1/2 cup level. Pour into greased Bundt pan and bake at 350 for 45 minutes. Cool and remove from pan.
Mix glaze together and spread over warm cake:
3/4 icing sugar
1 Tbsp. orange juice (2 1/2 orange)
1/2 tsp. orange rind
