Jalapeno Corn Bread
Melt in a
saucepan:
3 Tbsp. butter
Add and saute
for a few minutes:
1 diced Jalapeno pepper
In a separate
bowl beat together:
1 egg
1 cup buttermilk, yogurt or soymilk
2 Tbsp. honey
Mix dry ingredients
together:
1 cup wheat or spelt flour
1 cup yellow corn meal
2 tsp. baking powder
1/2 tsp. baking soda
1 cup corn kernels
Mix into egg
mixture and add the butter and pepper.
Optional: 1/2 cup grated cheese
Pour into a buttered 8-inch square pan and bake for 20 minutes
at 400. |
