Jalapeno Corn Cakes
Melt in a small skillet:
2 Tsp butter
1/4 cup finely minced red pepper
2 cups fresh corn off the cob
1/2 cup mince scallions
1 minced Jalapeno Peppers
Combine in a bowl:
1/2 cup corn meal
1/2 cup flour
1 tsp baking powder
1/2 tsp baking soda
Beat together until frothy:
2 large eggs
1 cup buttermilk
Mix into the flour mixture
along with sauteed vegetables. Lightly grease a hot skillet with
oil and fry over medium low heat about 2 minutes per side. Serve
with Guacaomole or salsa. |
