Nappa Cabbage with Garlic Vinaigrette
Nappa Cabbage
is a tender, mild flavoured, slightly peppery vegetable that
blends well with many flavours. Use it in sukiyaki, chow mien,
Asian soups or as a salad! Slice into 1/4 lengthwise and then
into thin cross strips crosswise.
In a salad
bowl toss together:
1/2 large Nappa cabbage shredded
1 - 1 1/2 cup grated Gouda or Edam
1/2 to 3/4 cup sliced black olives
Dressing:
Mix together:
2 Tbsp. apple cider vinegar
2 - 3 cloves minced garlic
Gradually
whisk in:
1/4 cup olive oil
1/4 cup water
Toss with
salad and add salt and pepper to taste.
