Roll Cabbage Roll
Saute
over medium heat for 2 minutes:
1 Tbsp oil
1 clove minced garlic
1 onion diced
Add
and simmer, covered for 35 minutes:
2 cups water or veggie broth
1 cup long grain rice
Meanwhile,
bring a pot of water to a boil and add:
1 medium cabbage, cut into 8 wedges, core removed
Cook
for 10 minutes, drain separate leaves and set aside.
Combine
rice with a combination of the following:
Currants or raisins
Cashew pieces or toasted sunflower seeds
Dill or marjoram
Other
vegetables of choice
Butter
a 9 x 13 pan. Line bottom with 1/3 cabbage leaves and then 1/2
the rice mixture, more cabbage, the rest of the rice and a final
layer of cabbage.
Pour
over top:
3 cups tomato sauce (Polish style)
OR 2 3/4 cups water and a 1/4 cup vinegar (Ukrainian style)
Bake
covered for 1 1/4 hours at 325.
