Chickpea
Cabbage Casserole
Heat
in a skillet sauté:
2 Tbsp. olive oil
1 clove garlic minced
1 tbsp. ginger minced (or 1 tsp. dried)
pinch of powdered cloves
1 onion chopped
1 cup tomato chopped
3 cups cabbage shredded
Place
in a casserole and add:
1 1/2 cups cooked chickpeas
1 cup vegetable stock
Cover
and cook for 30 minutes at 350.
