Linguini
with Broccoli and Cherry Tomato
Bring to boil water for pasta.
Meanwhile sauté over medium heat for 5 minutes:
2 Tbsp. olive oil
3/4 bunch broccoli florets
Remove to small bowl and add to hot skillet:
1 pint cherry tomatoes
Sauté until wilted and add:
1 Tbsp. minced garlic
1/2 cup white wine or bouillon
Cook for 3 minutes. Add to boiling water:
1/2 LB linguini
Add broccoli to tomato and continue cooking for a few more minutes
until broccoli is tender. Drain pasta and drizzle with a little
olive oil. Transfer to a serving platter and add:
1-cup ricotta cheese OR 1/2 cup feta cheese
Freshly ground black pepper
Toss together thoroughly and serve immediately. |
