Broccoli Peanut Pasta
Mix together
the following peanut sauce:
1/2 cup organic peanut butter
1/2 cup hot water
1/4 c cider vinegar
1 Tbsp. Blackstrap Molasses
1/4 tsp. cayenne pepper
Saute for
5 minutes until soft:
Olive oil
1/2 medium onion diced
1 minced garlic (and ginger)
1/2 LB diced Tofu (optional)
Add and continue cooking for 5 minutes:
1/2 bunch broccoli
1 large carrot diced
(other vegetables and combinations can be used as well)
Stir-fry for
5 minutes. Meanwhile bring 2 quarts water to boil in a large
pot. Add:
1/2 LB Organic Penne
Cover and
cook for al dente (8 minutes)
Serve with vegetable and Peanut sauce. |
