Broccoli Dijon
Cream together
1/4 cup soft butter
1 Tbsp. Olive oil
2 green onions minced
2 cloves garlic minced
2 Tbsp. Parsley minced
2 Tbsp. Dijon Mustard
Fresh ground pepper
Bring large
pot of water to a boil and add:
3/4 LB Rotini
Stir and cook
at the boil for 5 minutes. Then add:
2 cup broccoli florets
Continue cooking
for 3 more minutes or until pasta is done.
Drain and place in a skillet over low heat. Add the mustard mixture
and gently toss the pasta with tongs. Serve when evenly distributed
and heated through.
