Tofu and Broccoli with Peanut
Sauce
For the peanut sauce whisk
together:
1/2 cup peanut butter
1/2 cup water
2 Tbsp. Tamari
2 Tbsp. Blackstrap molasses
1/4 cup apple cider vinegar
1/2 tsp. cayenne
Saute:
1 Tbsp. olive oil
1 tsp. grated fresh ginger
2 cloves minced garlic
1 8-oz tofu cut into bite size cubes
Stir-fry for 8 to 10 minutes
and then transfer to peanut sauce. In the same fry pan, add and
saute for 5 minutes:
1 - 2 Tbsp. olive oil
1 tsp. grated fresh ginger
2 cloves crushed garlic
2 cups thinly sliced onion
1 bunch broccoli florets
Serve vegetable saute over
rice and top with gently warmed peanut sauce. Sprinkle with roasted
peanuts. |
