Cream of Broccoli Soup
Steam for 7 minutes and drain:
1 Lb broccoli (florets and peeled stems)
Reserve water.
In a saucepan over medium heat melt:
3 Tbsp. butter
Add and stir constantly:
3 Tbsp. flour
Gradually add and stir until
thickened:
1 cup cream
1 cup broccoli water
Process in blender:
1/2 the broccoli
Some of the liquid
1 Tbsp. non instant skim milk powder
Chop the rest of broccoli
and add to above.
Reheat and serve. |
