Chinese Vegetable Soup
Combine in
soup pot:
1 medium onion diced
4 cloves garlic minced
4 to 5 sliced ginger
7 cups water
Bring to boil
and simmer 45 minutes. Strain the broth and discard the solids.
Add:
10 small fresh mushrooms
1 8 oz can sliced water chestnuts
1 Tbsp. tamari (natural soy sauce)
1 bunch bok choy stems (save leaves to add later)
1/2-LB tofu diced in
Simmer 5 minutes
and then add:
Bok choy leaves
1/2 LB snow peas
Whites of 3 minced scallions
Serve topped
with scallion greens and drizzle with rice vinegar and sesame
oil. OPTIONS:
Sub spinach for bok choy and add as greens.
Add pre-made wontons with the mushrooms!
