Mushrooms
with Baby Bok Choy
Cut off the
base off of:
1 bunch Bok Choy
Then wash and cut into 1/2 inch pieces.
Combine the following:
2 Tbsp. Tamari
1 Tbsp. balsamic vinegar
1 tsp. brown sugar
2 tsp fresh grated ginger (or 4 powdered ginger)
Heat a skillet and saute until softened:
1 Tbsp. olive oil
1 medium onion sliced
1/3 Lb Oyster Mushrooms (washed and sliced)
2 to 4 cloves garlic minced
Add bok choy and ginger mixture. Reduce heat and cook covered
for two minutes. Uncover and continue cooking and stirring until
white of bok choy is tender. Serve with brown rice or Chinese
noodles. Season with tamari.
