Beets and Cream
Remove leaves from:
1 bunch beets save in airtight bag or bowl for use in another dish!

Peel the beetroot and dice into 1/2 inch cubes. Finely chop:
1 medium onion
2 cloves garlic

Saute in a skillet until golden. Add the beet root and continue cooking until soft. Just before serving add:
2/3 cup cream

Heat but do not boil and serve.
Salt and Pepper to taste.
