Vegetable Chow Mein
Sauté in a large skillet
on medium high heat:
1/2 Tbsp. Olive oil
1/2 Tbsp. Sesame Oil
1 garlic minced
1 thumb size piece of ginger mince
Marinated diced tofu or other protein (optional)
Add and continue sautéing:
3 stalks celery chopped
1 bunch Bok Choy sliced diagonally cross wise
1 cup button mushrooms (organic ones are not available)
Add:
1/2 cup water
2 Tbsp. Tamari (natural soy sauce)
Cover and steam for 3 to 5 minutes. Then add:
2 cups bean sprouts (organic ones are not available)
2 large chard leaves and stems chopped
1 or 2 squares chow mein noodles
Cover and steam for another 5 minutes.
Serve sprinkled with roasted cashews |
