Cooking Dried Beans

Cook dry beans as follows:
In a large pot place :
500g dried beans
water to cover
1 bay leaf
Bring to boil and then simmer for 1 to 2 hours depending on the size of the bean. Check tenderness after one hour as you don't want them to be mushy. Run under cold water to stop the cooking when done. Freeze what you don't need right away in 2 cup batches for easy use later. Use is soups, salads, casseroles, spreads and in refried beans for Mexican food. Lentils and split peas take closer to 45 minutes.
