Beans
Sauté
in fry pan:
3 Tbsp. oil or butter
1 onion diced
1 garlic minced
Add and continue frying for 5 minutes:
2 cups cooked black turtle or pinto beans
1 tsp. ground cumin
Mash beans with potato masher or fork. Add the following and
simmer for another 10 minutes:
1 cup water
1/4 cup salsa
1/2 cup fresh tomatoes diced (if available)
Serve in tacos or burritos with chopped salad vegetables, salsa
and sour cream.
