Kidney Bean Basil Salad
Mix together in a salad bowl:
2 cups cooked kidney bean (1 can drained and rinsed)
3 Tbsp. Olive Oil
3 Tbsp. red wine vinegar
Juice of 1/2 a lemon or lime
4 minced green onions
2 cloves minced garlic
1 cucumber or zucchini chopped
1 cup diced broccoli (stems too, peeled and chopped)
1 small red pepper diced (if available)
Refrigerate for a few hours
and just before serving mix in:
1/4 cup minced fresh basil leaves
1/4 cup parsley |
