Green Olive Pesto
Combine in a food processor:
3 to 5 cloves garlic peeled
1/2 cup green nicoise olives pittted
1/2 cup parsley chopped
1/2 cup fresh basil leaves

Blend slowly and dizzle in:
1/2 cup olive oil
Cook al dente:
1Lb spaghetti

Toss hot pasta with pesto and add:
1/2 cup pitted Kalamata olives

OR Toss with cooked cheese tortellini. Add fresh grated Parmesan and more chopped parsely. Cool and serve as a salad.
Serves 5 or 6
