Blue Cheese and Arugula Salad
Arugula is
a tasty addition to salads and sandwiches. It is also great on
pizza combined with pinenuts, peppers and mozzarella. Chiffonade
is a way of slicing into pretty strands. Layer 3 or 4 leaves
together and roll around the stem. Slice crosswise.
Wash stem, and spin-dry:
1 head local leaf lettuce torn into pieces
1 bunch Arugula - chiffonade
Spread on
a platter. Cut in half lengthwise and remove the seeds from:
1 or 2 green pepper
Then cut crosswise
into long curved strips.
Cut in halves:
1 cup cherry tomatoes
Spread on
bed of lettuce and sprinkle with:
1/4 cup crumbled Moonstruck Baby Blue
Drizzle with
the following dressing:
2 Tbsp. balsamic vinegar
1/8 cup olive oil
1 minced garlic
1 Tsp. maple syrup
