Grown Artichokes In Mango and Onion Dressing
To
prepare artichoke break or cut the stem from the bottom and
break off the lower leaves until only the small inner ones remain.
Rub
in lemon juice and drop into 1/2 cup steaming water for 7 minutes.
Cover.
Turn
over and continue steaming for another 7 minutes. Cool.
Scrape
out the chokes (hairy part inside)with a spoon, cut into wedges
and stir into the following.
Mango
dressing:
Puree in a food processor or blender;
1 ripe mango peeled and cut into small cubes
1 1/2 Tbsp. fresh lemon juice
1 Tbsp. red wine vinegar
1 Tbsp. olive oil
freshly ground black pepper
Transfer to a small bowl and stir in: 1/2 cup minced green or
red onion Prepare the dressing while the artichokes cook. Cool
and serve.
