Rum and Cider Baked Apples
Wash and
core:
4 unpeeled apples
Score the
skin about 1 inch down from top of apple. Place standing in a
casserole. Stuff each apple with:
1 Tbsp. Organic raisins
1 1/2-tsp. brown or cane sugar
1 tsp. butter
Pour into
pan:
1/2 cup water
3 Tbsp. Rum
(The alcohol will evaporate off leaving the rum flavour!)
Bake at 375
until tender 30 to 45 minutes, basting once or twice with the
juice in pan.
In a saucepan mix:
2 Tbsp. brown or cane sugar
1 Tbsp. cornstarch or arrowroot flour
Stir in:
Juices from pan
3/4 cup apple cider
Bring to boil,
stirring until thick and clear. Add:
1/4 tsp. nutmeg
2 tsp. butter
Place apple in individual serving dish and pour sauce over. Serve
with whip cream if desired.
